Another simple and healthy salad

Mung bean salad 🥗

1 cups sprouted mung beans
½ cup finely diced red onion
½ cup finely sliced red bell pepper
1/2 cup chopped cherry tomatoes
½ cup chopped fresh parsley

Dressing
1½ Tablespoons chopped green onions
1 clove garlic
1 pinch cayenne or red chilli powder
2 tbsp extra virgin olive oil
3 Tablespoons fresh lemon juice
½ teaspoon dijon mustard
Salt and pepper to taste

Instructions
In a mixing bowl, combine the mung beans, red onion, red pepper, parsley.

In a blender, combine the dressing ingredients. Blend well and season to taste. Add the dressing to the mixing bowl and toss to combine. Serve the salad with a fried egg on top !
Another option , heat the olive oil in pan , add the combine mung bean , fry for few min and add the dressing fry for another min you will have a warm salad
Serve warm or cold salad on bed of avocado, sprinkle some crushed red pepper !! Enjoy 😉
