Berry chia pudding (vegan )

3/4 cup chia seeds
3 cups almond milk or milk of choice

2 teaspoon honey or other sweetener, optional

1 cup blueberry

1 cup raspberry

1/2 cup coconut milk yogurt

1 tea spoon blue butterfly pea powder I used suncorefoods

1 tea spoon pink pataya (dragon fruit ) powder suncorefoods

* Pour the chia seeds, vanilla almond milk and honey into a jar and mix well. Let settle for 2-3 minutes then mix again very well until you see no clumping at the top or bottom.
* Separate in half and add blue pea powder in one and pink Pitaya powder on the other

* Cover the jar and store in fridge overnight or for at least 4 hours.
* The next day, place blue butterfly pea chia pudding in a blender with 1 cup blueberry . Blend until smooth
* Do the same with raspberry and pink Pitaya chia pudding
* You can garnish as you desire, and enjoy immediately or store in the fridge for up to 1 week.

You can layer as you like! I layer here the raspberry pink Pitaya chia pudding then coconut yogurt then blue butterfly pea flower blueberry pudding on top then garnish with blueberry and raspberry
