🥶🥶 Ginger turmeric muffin

Ginger and turmeric both have a long history in south Asian kitchens as ways to make food more interesting and flavorful. At the same time, each is associated with a range of health benefits – now a days western world are crazy about this two ingredients they have been use for so many things , I used ginger before for baking but I never use turmeric , that day I bought way too much fresh turmeric root from the health food store so I thought to use it in the muffin and the result is so yummy so here you go ginger turmeric pear muffin

1 flax egg (1 tbsp ground flax seeds + 3 tbsp water
* 1 ¾ cup all purpose flour
* 2 about 2inch fresh turmeric
* 1 tsp cinnamon
* 2 tsp baking powder
* 1 tsp salt
* ½ cup grapeseed oil or coconut oil
* ½ cup maple syrup
* ¼ cup sugar
* ¾ cup unsweetened almond or coconut milk
* 1 tsp grated fresh ginger
* 2 small Pears peeled, cored and diced small

1. Preheat the oven to 375F. Line a 12 cup muffin tin with liners and coat lightly with cooking spray
2. In a small bowl, combine the ground flax seeds and water. Set aside
3. In a small bowl the combine flour, baking powder, turmeric, pumpkin pie spice and salt
4. In a large bowl, whisk the grapeseed oil, sugar and maple syrup until well combined. Slowly pour flax mixture and milk as you whisk. Add the grated ginger
5. Slowly add the flour mixture and mix until just combined (do not over mix)
6. Fold in diced pears. Fill liners with batter ⅔ of the way bake till it’s done
