Hilsa fish head curry (Ilish maacher mathar tel jhol )

We bengali are the ultimate fishaholic , believe me we love fish we can have it for every meal !

Ilish is one of the fish which is Bengalis pride and joy !! We can talk about this fish and dish out of this for hours, so now you know how deep is our love for this fish

Ilish mach is a kind of fish, whose no part should be waste. And if you are a hilsa or Ilish fan, then you must know the about the head , What a delicacy it is !!

Tel jhol’ (oil infused gravy) is the name given to a light Bengali curry, which is infused with flavours of kaalo jeere, green chillies, and sharp mustard oil. Because it is sparsely spiced, this style of curry doesn’t overpower the star ingredient—the fish—but lets it shine on its own. I like to cook this dish with Ilish fish head !!

Fish head cut from the middle and if you like one or two pc of fish
* 2 medium size potato cut lengthwise
* 1/2 cup mustard oil
* Handful of green chilli
* ¼ tsp kaalo jeere (nigella seeds)
* salt
* 1 tea spoon turmeric powder
* 1 tea spoon red chili powder
* 1 tea spoon ginger paste

* Marinate the fish head with salt and turmeric powder, and set aside.

* Heat the mustard oil in a pan till it starts to smoke lightly carefully fish pieces into the oil one by one and fry them for a two on each side. Do not over fry take them out
1. On the same oil add the kalo jire (nigella seed) and green chilli then add the potatoes add turmeric chili powder and ginger paste sautéed for couple of min , then add salt according to taste
2. Add water and bring to boil , then add the fish head and other pieces .
3. Simmer the flame till potato is done and oil float on the top !! If you like you can add some chopped cilantro
