🌴🌴 Kavarma Bulgarian meat dish
I am blessed enough to travel many part of the world and whenever I go someplace I always try to eat the local traditional dish and learn the recipe so I can make it later , I was Bulgaria last year a place called verna a beautiful city on coast of Black Sea !! Kavarma is one of the most popular meals in Bulgaria which is not so famous outside the country. The ingredients and preparations depend on the region. Almost every part of Bulgaria has own Kavarma recipe. In general, the meal consists of marinated cooked meat and vegetables. It could be mild or spicy depending on the region and the likings. Goes perfectly well with beer or rakia.
2 lbs pork meat, cut into cubes
3 medium potato cut into cube
1/2 cup oil
2 big leaks
3 tablespoon tomato sauce or puree
1 tablespoon paprika
a pinch of crushed black pepper
1 cup red or white wine
1 onion, chopped
2 bay leaves
Couple of hot pepper
Combine wine, tomato sauce, paprika and black pepper to make the marinade.
Hear oil in pan very hot Add the cut in potato and the pork and cook until meat starts to brown.
Take out and soak in the marinade for about 30 minutes.
Cut the leaks in disc add to the same hot oil
Fry for couple of min
Add 1/2 cup water to it and cook while soft
Add meat , potato and remaining marinade to the leaks, reduce the heat and simmer until most of the water is gone and meat and potato is done you can add more water or broth if required
Add the bay leaves, chopped onion, and the hot pepper and cook till onion are translucent
serve hot with white rice or just French fries
