Last few days I saw so many pasta post I was craving for it , as I always say in a perfect world I want to eat pasta every day and not to worry about gain weight ,well that not possible so I tried to make somewhat healthy pasta , bolognese is absolutely my favorite pasta sauce but instead of meat I used red lentil in this sauce that way you will get the protein and the texture try it out and let me know !!

Lentil mushroom bolognese

1 cup red lentils rinsed
* 1 lb favorite gluten free spaghetti
1 tsp oregano
* 3 garlic cloves minced
* ½ cup yellow-onion, diced
* 1 cup white mushrooms, diced
* ½ tsp red-pepper-flakes
* 24 oz tomato sauce unsalted
14 oz fire roasted diced tomatoes
* ¾ cup water
* salt and pepper

Cook the pasta as you normally would.
In a large-skillet, add the garlic, onion, oregano, mushrooms, red-pepper, pepper and salt, combined with 1 tablespoon olive-oil, also saute about 3-5minutes till the mushrooms and onion are tender.
Then add the tomato-sauce, diced tomatoes, water and lentils and stir to blend. Simmer mixture till lentils are cooked, stirring occasionally. Make sure you don’t overcook the lentil , it should cooked through but still hold the texture

Serve lentil bolognese over pasta, sprinkle with extra red-pepper-flakes lemon zest and enoy it!

    I too have been craving for pasta for quite some time now. Think it’s time for me to follow what my heart and stomach say. You have made me drool over pasta all again 😍
    Will try this surely but I think this would be too healthy for me. My mother would be so happy watching me having this healthy pasta!😂
