* 1 tablespoon butter
* 2 tablespoons olive oil

* 1/4 cup heavy whipping cream
* 3/4 cup milk
* 1/4 cup grated Parmesan cheese
* 1/2 cup roasted red peppers * Salt and pepper to taste
* 2 tablespoons minced fresh parsley or scallions
Pat salmon dry with paper towels and season on both sides with salt and pepper. Heat a large skillet over medium-high heat, then place butter and oil in pan, swirling until bottom is coated. Sear salmon 3-4 minutes on each side until salmon is golden and registers 145F. Keep salmon warm

In a small saucepan over medium-high heat, melt butter. Saute garlic in butter 1 minute or until fragrant. Whisk flour into butter until smooth then gradually whisk in cream and milk.
