When it comes to wine , food and baked goods I am very partial about French ..

Madeleine is one of them this tiny French cake is very close to heart
I don’t make them often because each of them like thousand calories well not thousand but a lot but whenever I made it it’s just gone in few hrs .. but sometime I indulge .. yesterday was one of those days

Dark Chocolate Madeleine

* unsalted butter 1 stick
* 6 oz bittersweet chocolate, finely chopped (I used 50 %cacao)
* 1½ cups powdered sugar
* ½ cup flour
* ½ cup black cocoa powder (you can buy fr amazon )
* ¼ tsp salt
* 6 egg whites

1. Grease a standard madeleine pan Set aside.

2. Combine butter and chocolate in a medium, heatproof bowl. Microwave on 30-second increments , stirring after each 30 sec, until smooth. Set aside to cool slightly.

3. In a medium bowl, sift togther dry ingredients (powdered sugar, flour, black cocoa powder and salt). Set aside.

4. In a large bowl, whisk egg whites until frothy Add flour mixture and stir until just combined. Add the chocolate mixture and stir with a spatula until combined.

5. Chill the batter in the refrigerator for Atleast 30 min or more ! Portion batter into Madeleine pan I used medium cookies scoops 

6. Preheat ove 375 degrees , bake the madeleines for about 12 minutes. A toothpick inserted into the center should come out clean. Cool in the pan for 1-2 minutes 

7. Serve little warm enjoy
